Mom’s Best Ever Coffee Cake
While I enjoy cooking, my real love lies in baking. Sure, finding and trying a new recipe for chicken can be satisfying. But whipping up chocolate chip cookies, homemade bread, or double chocolate (with lots of chocolate chunks thrown in for good measure) brownies is heavenly! My Mom is also a baker. Even though she worked a lot of hours when I was a kid, she still found the time to whip up cookies, muffins, and even doughnuts. But of all the things she bakes, this coffee cake is one of my all time favorites. It’s delicious, it’s easy, and you bake it in a 9 X 13 pan (which for most people means you’ll have it around for a few days, but in my house means we’ll have enough for breakfast on Saturday morning!)
Mom’s Best Ever Coffee Cake
2 1/2 cups flour
1 cup brown sugar
3/4 cup white sugar
1 tsp. nutmeg
1 Tbsp. cinnamon
1 tsp. salt
1 cup cooking oil
-Mix this well by hand. Take out 3/4 cup of this mixture and reserve for topping. To the remaining mixture, add:
1/2 cup flour
1 tsp. baking powder
1 cup sour milk (1 cup milk with 1 Tbsp vinegar or lemon juice added to it.)
1 scant tsp. baking soda
1 egg
-Mix this well by hand. Pour this mixture into an ungreased 13 X 9 inch pan. Sprinkle the 3/4 cup of the mixture which was reserved onto the top of the batter. Bake at 350 degrees for 30-35 minutes.
